- Week 1 includes introduction to the training panel and written document studies. Documents include detailed kitchen curriculum and cooking standards including exam questions, occupational health and safety, nutrients, food groups, the most basic rules you need to know theoretically and hygiene and sanitation information. Week 2 includes introduction to design pastry, production plan and SKT standards, customer order form, measurement tables and recipe multiplication tables according to the number of people, equipment introduction and the most detailed information you need to know in the field of design pastry. In this program, our Concept Pastry Training content is studied comprehensively with all recipes, products and applications. The study period for this section is determined as 3 weeks.
- Week 5, with the basic techniques taught, using the desired materials, diversifying the cake dough, and making cakes with any material that comes to mind are covered. At the same time, techniques such as preparing and diversifying the inner filling are also included in the program. What is buttercream, how to work with it, what are the coloring and usage stages, how to create texture, and mastering the details are explained in practice so that you can smoothly coat the cakes. This week's program covers Cake Types and Buttercream Techniques Training. Detailed answers to many frequently asked questions such as colors, paint brands, which paint type is used for buttercream are also explained. The study period for this section has been determined as 2 weeks.
- Week 7, the basics of working with chocolate, which will also support the lessons in the coming weeks, are taught in practice. At the same time, the tricks of working with a shiny texture cake are shown with a technique special to Mine Keskin Academy. Shiny Cake and Chocolate Bonbon Education are studied in this program. The study period for this section is determined as 2 weeks.
- In the 9th week, the French Pastry Education is carried out by moving on to showcase products, where the most technical, chemical and culinary knowledge is needed in this field. Layer cakes consisting of mousse creams, fillings and very delicious cakes are covered with mirror glaze and chocolate spraying techniques and decorated with chocolate decorations. Product design is studied in 5 different forms, and each design consists of different recipes from inside to outside. The study period for this section is determined as 2 weeks.
- Week 11 continues with delicious Patisserie display products and works on popular sales products such as dessert cups, tarts and San Sebastian cheesecake. The training content covers the Sweet Creations by Mine Keskin program. The study period for this section is determined as 1 week.
- Week 12 continues with the indispensable products of a hot sale sweet patisserie, and moves on to the much-loved Cream Puff and Quiche recipes. This section includes techniques for preparing a wide variety of products with different fillings. What is pateachoux dough? What are the tricks you need to pay attention to? How to make profiteroles? How to make craquelin? How do you prepare the filling of a good quiche? You can find answers to questions such as. The study period for this section is determined as 1 week.
- Week 13 covers the delicious sweet and salty yeast group. How to make that delicious and soft pastry that you love so much? What can you use in the fillings? What is Easter bun? There are leavening and shaping activities that include answers to questions such as.
- In the 14th week, the production of Focaccia bread and Brioche continues with yeast dough types and their characteristics.
- Week 15: Moving on to layered dough, layered oil dough fermentation and its derivatives are studied in detail. Croissant, puff pastry and different forms of layered dough are shown. The training includes the most basic techniques that you can successfully apply in your own kitchen using the hand rolling technique.
- At the end of the program, an online test exam consisting of 40 questions is conducted to measure your level. At the end of the training, you can receive your professional qualification certificates as a well-equipped pastry chef and enter the sector with confidence.
